Espresso 101 – How to Choose Coffee Beans For Espresso

[ad_1]

The coffee market offers a vast array of beans of every origin, in every degree of roast and grind. With so many options to choose from, how does one go about picking the best bean for making espresso?

It is best to start with the basics. Cappuccinos and lattes are variations on espresso. They differ only in their ratio of espresso to steamed milk. Neither requires its own separate kind of bean.

The inexperienced shopper could easily be fooled into thinking that there are countless assortments of beans to chose from and be overwhelmed. Sometimes, unscrupulous marketers with take advantage of this common myth so they seem to have a larger inventory. In reality, there are only two types of beans available commercially: Arabica and Robusta.

Arabica is a high altitude bean, grown at 2,400 feet above sea lever or higher, characterized by a smooth, yet slightly acidic, taste. It is usually grown in eastern Africa and Central and South America. Robusta grows in the lower altitudes of Southeast Asia, central Africa and Latin America and has a more potent, sometimes bitter taste.

There are many methods and opinions about the best way to roast beans, but the basic process involves exposing green, raw coffee beans to high temperatures, usually about 480 degrees Fahrenheit, for seven to 12 minutes. The heat alters the beans, manipulating their natural bitterness and acidity. The beans become more bitter and less acidic the longer they are roasted.

There is no one right way to roast or grind beans for espresso. In fact, espresso is usually made with a blend of beans of different colors and consistencies. It is not uncommon for different geographical areas to favor a specific blend. For example, in northern Italy, they prefer espresso roast in the medium range, while California tastes lean toward the darker, French roast.

You are not likely to find the freshest beans in a grocery store, and you can bet on that when in comes to pre ground coffee. The best you can do in that situation is pay close attention to the expiration date. You should have better luck finding fresh beans in a coffee house, especially one that roasts in house. Naturally, they will need to roast more of the most popular, fastest selling bean more often, and it is probably the most popular for a reason. Perfect freshness comes from grinding your own just roasted beans immediately before brewing.

Quality beans are a good place to start, but by no means is that the only factor to consider when making espresso. Other things to think about are the time lapse between grinding and brewing, the time lapse since roasting, the condition of equipment and water quality. What makes the best espresso will likely be an endless debate, but the endless options ultimately boil down to a matter of preference.

The School Lunch Solution

[ad_1]

At Annabel and Luke's school today, some moms and I were discussing the school lunch dilemma. How much food should we send? What will our kids actually eat? How do we offer them variety without making ourselves crazy? How can we encourage healthy eating?

It seemed like my kids were the best eaters of the bunch. I highly doubt that's my doing--I tend to think with kids and eating habits, you get what you get, and then you keep trying! I'm lucky that my kids eat salad and live for fruit, but I know that's not always the case. So here it is, I'm no guru, but I thought I'd try to offer my best school lunch solutions:

Firstly, invest in some re-usable containers, like a small thermos, a package of small, flat tupperware, and my favorite, a sandwich cover. Our school sold the wrap-n-mats last year, and I bought two, alternating days of using and washing. And a must-have is a re-usable water bottle, like the ones from Sigg. Let's face it, using baggies might be easier, but in the long run, we'll be teaching our kids an important environmental lesson about re-using and reducing waste. Also, we'll be teaching them responsibility because they have to remember to stick the darn things back into their lunch bags and bring them home!

Here are some non-pbj ideas for sandwiches:

* mini-bagels with cream cheese or hummus

* cheese sandwich

* peanut butter and honey (and banana!)

* tortilla roll-ups with lunch meat, flavored hummus, and cheese

* veggie delight: whole wheat tortilla, ranch dressing, sliced red pepper, spinach, and cheese

You don't always have to pack a sandwich. I mean, Annabel ate pb&j three times a week last year, but it does get a little old. I like to create what I call, "Hodge-podge" lunches, which means I stick about 3-5 different random things in different containers. Today, Annabel's lunch contained: 4 baby carrots, 4 whole wheat tortilla wedges, a container with several dollops of hummus, string cheese, and a handful of graham cracker bites. What did she come home with (besides her containers)? Three of the carrots and one of the tortillas. Not bad, huh? And this took me only 5 minutes to throw together the night before!

Here are some protein-packed ideas for you:

* hummus

* canned, rinsed black beans

* string cheese or cubed cheese

* chick peas (garbanzo beans): rinse and drain a can, put on a jelly roll pan and season with garlic salt, and bake at 400 degrees for 45 minutes or so, shaking the pan frequently to ensure all sides get crunchy (a GREAT potato chip alternative!)

* hard-boiled egg whites (the yolk tends to gross out my kiddos)

* tofu: Okay, I know what you're thinking. Kids, eating tofu? Tofu takes on the flavor of whatever you season it with. For you tofu-virgins, I buy the extra-firm, slice it thinly, season it with season salt or garlic, and fry it in olive oil or sesame oil till it's crispy. My kids love it! You can serve it with warm angel hair noodles and some soy sauce!

Here are some thermos ideas for you. Make the meal in the morning and it'll stay warm till lunch. If your school refrigerates lunches, ask the teacher to please leave the thermos in your child's cubby or desk:

* soup (my kids' favorite is Italian bean and pasta soup***--my recipe at the end of this post seriously makes enough for weeks, so make it ahead of time and freeze a bunch!)

* whole wheat pasta with olive oil and parmesan/ or pasta with marinara sauce

* mac and cheese

* grilled cheese: sounds a little gross, but I have a friend who makes grilled cheese in the morning, slices them into "sticks," and keeps it semi-warm in the thermos. Her kids LOVE it!

* French toast sticks

* leftovers: stews, lasagna, whatever your kid will eat!

Here are the other staples that I alternate in my children's lunches:

* yogurt

* yogurt drinks: the Yoplait Kids ones have the least sugar out of the ones at my grocery store

* sliced fruit

* ants on a log: celery with peanut butter and raisins

* cold leftover pizza

* applesauce in small containers

Trying to feed our children healthy, varied foods can be tough, I know. But if we want to increase their palettes, then we need to get a bit creative and keep introducing new, healthy foods. Look through the list above again; I'd venture to guess that you have over half of the items already in your pantry or fridge. Now get cooking, and let me know which ones are big hits at your house!

Italian Bean and Pasta Soup

2 -3 cans cannellini beans, drained

2 tablespoons olive oil

1 onion chopped

2 - 3 carrots, peeled and chopped or sliced

2 - 3 celery stalks, chopped

4 cloves garlic, minced

8 cups chicken (or vegetable!) stock

1 can diced tomatoes

salt, pepper to taste

1/2 lb small dried whole wheat elbow macaroni

olive oil and parm cheese for serving

In saucepan over medium heat, saute onion, carrots, celery and garlic in olive oil, about 8 minutes. Add liquid, beans, tomatoes, salt and bring to boil. Cover, reduce heat and simmer 1 hour.

Remove 2 ladlefuls of beans/veggies and blend in a blender, then return puree to pan. (I always puree the veggies, like tomatoes, that my kids say that they don't like to eat!). Season with salt, pepper and reheat gently.

Cook pasta to barely al dente. Add to soup. Simmer a few minutes. Serve with cheese and olive oil.

***If you make ahead, only add pasta when reheating.

Starcraft 2 Baneling Rush Build Order

[ad_1]

In order to use the Starcraft 2 baneling rush strategy effectively enough to subdue an opponent, your timing has to be very precise! This means you can not be slowed down by a bad build order. If the Starcraft 2 baneling rush build order you decide to use gets the wrong upgrades at the wrong time, it will usually result in the timing of your attack being too late or not strong enough to do any real damage.

Here is the best Starcraft 2 baneling rush build order I've been able to find so far:

10/10 -> Build Drones

12/10 -> Double Extractor Trick to build 2 more Drones

12/10 -> Build first Overlord

14/18 -> Build an Extractor with 3 drones mining

15/18 -> Build a Spawning Pool

15/26 -> Build a Roach Warren

15/26 -> Build a Queen

17/26 -> Build a Zergling

17/26 -> Build a Zergling

19/26 -> Build a Baneling Nest

19/26 -> Build another Overlord

19 - 28 -> Build Roaches to support Banelings

The banelings need to go in first in order to break any kind of wall your opponent might be locked up behind. This means sending them in mass numbers to make sure that your baneling rush does not get deleted quickly. Have a few roaches ready to support the attack as soon as it hits your opponent's base.

The roaches are very important simply because you can not expect success relying on one unit alone such as the baneling. The baneling's damage is great but also limited since it only has one suicide attack. Take advantage of this suicide attack by using it to take out large groups of infantry, then immediately move into roaches to kill off the remaining couple of units and destroy your opponent's buildings.

How to Use Oil Spill Booms

[ad_1]

Oil spill accidents can happen and it is wise to be prepared for such an occurrence by having oil spill booms on your vessel. It does not really matter if you are carrying tons of oil in your cargo as your ships sets sail on the sea, or if you are fishing in a calm, placid lake. If there is an oil leak, you have a major problem on your hands, and you will be responsible for it.

If this happens, then it is also your responsibility to clean up the mess. Thus it always helps to be completely prepared. For that, you have to ensure that you carry oil absorbent spill kit equipment around for emergencies.

o To control an oil spill, you have to be highly efficient and quick in dealing with the problem, before the oil spreads too far out. You can definitely call others for help, but before more aid comes your way, you must be able to control the spill immediately. It works best to have the oil cleanup products like absorbent pads and oil spill booms with you to take control of the situation yourself.

o If you have you have employees, it is best to have some type of training so you know what to do immediately in case of an oil spill before the situation gets out of hand. For this, you will have to make them go through the required training sessions, and teach them how to use the absorbent pads and oil spill booms properly. If you stay ignorant and helpless, you could be fined heavily for the damage that you will cause. Consider the training cost as an investment which will save your money in the future.

o When you spill oil, it usually will spread out thinly over the water. You need to surround the damaged area and contain the oil spill so that the chemicals do not spread any further. For this, you will need oil spill booms. These booms soak in only the oil and repel the water. The harmful chemicals are skimmed off the surface without letting any further damage being done.

o Oil spill booms contain absorbent polypropylene which is held in a casing inside a tough outer mesh. Oil spill booms come in segments that are effective even in rough water. They generally come in 10 or 20 feet in length and 5 "or 8 '' in diameter. They have carbon steel connectors on each side with a nylon rope running through them so the sections can easily be connected together.

There are some general guidelines that will help you while using an oil boom. Wear protective gears like goggles and gloves.

First find out the amount of oil that has been spilled and the amount of the damaged area. Then, connect the number of boom segments that you will need to surround the affected area.

Secure the exit points for the oil spill. Throw out on the water the oil only absorbent pads that come in the spill kit to soak up the oil that is surrounded by the oil spill booms.

The oil soaked pads and oil spill booms should be bagged once the spill is cleaned up and dispose of according to the local, state and federal regulations.

Remember, that it is required by law to report any oil spills on water and to have the necessary equipment on hand to assist in the clean up of the spill. If you are going to polluting any waterway the fines can be tremendous.

Kalonji Oil – History, Nutrition, Benefits & Uses

[ad_1]

Both Kalonji oil and seed are equally good but kalonji oil is preffered over seeds as it is 35to 50% more potent and convenient to use

Kalonji oil is made from truly a remarkable herb called nigella sativa, popularly known as Black cumin or Black seed.

Kalonji is known around the world by many names because of its ancient popular history and medicinal value viz: black caraway, roman coriander, carvi (french), schwarzkummel (german), kalonji (Hindi/urdu), kezah(Hebrew) chernushka (Russian), corek-otu(Turkish), habbat-albarakah or habbatus-sauda (Arabic) siyah daneh (Persian) etc.

Kalonji is sometimes misleadingly confused with similar looking onion seed and black sesame, both of which are totally unrelated and deffinately are not the same.

history

Kalonji seeds have been found in several sites from ancient Egypt, including Tutankhamun's tomb. Although its exact role in Egyptian culture is unknown, it is known that items entombed with a pharaoh were carefully selected to assist him in the after life.

The earliest written reference to N. sativa is thought to be in the book of Isaiah in the Old Testament where the reaping of nigella and wheat is contrasted (Isaiah 28: 25, 27). Easton's Bible dictionary states that the Hebrew word ketsah refers to without doubt to N. sativa (although not all translations are in agreement)

In Islam, it is regarded as one of the greatest forms of healing medicine available. Muhammad (S.A.W.) once stated that the black seed can heal every disease-except death-as recounted in the following hadith:

[Sahih Muslim: Book 26 Kitab As-Salam, Number 5489]

It is also included in the list of natural drugs of 'Tibb-e-Nabavi', or "Medicine of the Prophet (Muhammad)(S.A.W.)", according to the tradition "hold onto the use of the black seeds for in it is healing for all diseases except death" (Sahih Bukhari vol. 7 book 71 # 592).

Nutritional Components of Kalonji

Kalonji contains over 100 valuable nutrients. It is comprised of approximately 21% protein, 38% carbohydrates, and 35% plant fats and oils. The active ingredients of Kalonji are nigellone, thymoquinone, and fixed oils.

Kalonji contains significant proportions of protein, carbohydrates and essential unsaturated fatty acids, namely linoleic acid and gamma linolenic acid(omega3 &6), which are essential for a healty immune system other than calcium, potassium, iron, zinc, magnesium, selenium, vitamin A, vitamin B, vitamin B2, niacin, and vitamin C.

Nigellon semohiprepinon is an effective treatment of bronchial asthma and respiratory allergies because of its ability to expand and relax the air ways. It also reduces the release of histamines into the bloodstream and thus works against allergic reactions.

Another active ingredient of kalonji isThymohydrochionon, also acts as an antihistamine and pain reliever.

Use of kalonji helps in synthesis of prostaglandin E1. Prostaglandin E1 suppresses the release of allergic messenger substances and harmonizes the immune system. During the course of long term use the body's defence mechanism stops its excess activity and regains its balance. This ameliorates ailments caused by allergic hyper-reactions, such as asthma, hay fever, and eczema

Long-term supplementation with Kalonji can reduce allergic symptoms greatly

It has been traditionally used for a variety of conditions and treatments related to respiratory health, stomach and intestinal health, kidney and liver function, circulatory and immune system support, as analgesic, antiinflammatory, antiallergic, antioxidants, anticancer, antiviral and for general well-being

Scientific research

Thymoquinone and pancreatic cancer treatment

Researchers at the Kimmel Cancer Center at Thomas Jefferson University in Philadelphia have found that thymoquinone, an extract of nigella sativa seed oil, blocked pancreatic cancer cell growth and killed the cells by enhancing the process of programmed cell death, (apoptosis). While the studies are in the early stages, the findings suggest that thymoquinone could eventually have some use as a preventative strategy in patients who have gone through surgery and chemotherapy or in individuals who are at a high risk of developing cancer.

"The seeds are also rich in sterols, especially beta-sitosterol, which is known to have anticarcinogenic activity."

Foods That Cause Acne

[ad_1]

The embarrassing condition of acne has been blamed on a wide variety of causes throughout the ages. Many people unjustly blame individuals with acne-prone skin of being dirty or failing to wash their faces properly. This is obviously far from the truth as acne can strike anyone, regardless of their personal hygiene habits. Others believe that eating large amounts of chocolate will ensure an acne breakout. This is also not the case, but research has linked acne to choices a person's diet. We are going to discuss some types of foods that cause acne.

Foods that are highly acidic tend to cause acne as they create an imbalance in your body's pH levels. The foods you should avoid include the following:

  • Vegetables: lentils, squash, corn
  • Fruits: currants, plums, prunes, cranberries and blueberries
  • Grains: barley, cornstarch, oatmeal, wheat bran, amaranth, rice, rye, wheat germ, noodles, macaroni, spaghetti, bread, soda crackers, white flour, rolled oats and wheat flour
  • Beans & Legumes: chick peas, green peas, kidney beans, pinto beans, red beans, soy beans, black beans and white beans
  • Dairy Products: butter, ice cream, processed cheese, butter and ice milk
  • Nuts & Butters: peanuts, pecans, walnuts, cashews and peanut butter
  • Animal Proteins: bacon, beef, pork, salmon, lamb, fish, clams, cod, mussels, sausage, scallops, turkey, venison, shrimp and lobster
  • Fats & Oils: canola oil, lard, olive oil, sesame oil, sunflower oil, hemp seed oil and safflower oil
  • Sweeteners: corn syrup, sugar and carob
  • Alcohol: spirits, hard liquor, wine and beer
  • Condiments: vinegar, pepper, ketchup and mustard
  • Drinks: coffee and soft drinks
  • Drugs & chemicals: aspirin, pesticides, tobacco and herbicides

If you want to prevent or minimize acne breakouts, you should replace acidic food with alkaline food choices. Some examples include carrots, cucumbers, garlic, lettuce, tomatoes, apples, grapes, lemons, pineapples, raisins, strawberries, peaches, oranges and almonds. You may be surprised to see so many citrus fruits on this list. The reason is that the specific citric acid they each contain has an alkalinizing effect on your body that will actually reduce the level of acidity, rather than increase it.

Rather than making an effort to avoid one specific type of food, it is better to avoid groups of acidic foods that will enhance your acne. Replace some of the choices in the first list with more alkaline foods from the second list. You will soon discover that small changes in your diet can produce big results!
